My life is busy, and I'm sure many readers can echo the same sentiment. The last thing I want to do at 2040 hours (8:40 pm for my non-military time readers) is cook dinner. I do *LOVE* cooking, but not at that hour! What to do? Well in my case I turned to a Smithfield recipe.

Simple Stir fry
For the longest time I've always made Thursday my international meal night. This may not qualify as authentic Asian food but it has great appeal in both taste and preparation. Spicy cashew shrimp stir fry is fast to make, and may just become a repeat offender - it is that good!
